Whiskey

Waterford Irish Whiskey

Irish whiskey, distilled on Grattan Quay and named for the city that made it possible.

How we make it

Grain, water, copper, oak

Four steps, done here in Waterford. Our distillers will add the detail that makes them ours.

  1. 01

    Mash

Grain and water are mashed to draw out the sugars.

  2. 02

    Ferment

Yeast turns those sugars into a beer-like wash.

  3. 03

    Distil

The wash is distilled in copper stills in our still house.

  4. 04

    Mature

The new spirit rests in oak until it is ready, and not before.

The cask

Before it carried whiskey, it carried the world

For centuries, barrels carried Waterford’s trade across the Atlantic: claret from Bordeaux, salt from Biscay, oil from Iberia. Today the same object carries our whiskey through its years in oak. Different liquid, different century, same purpose.
